Lot 12 | Dove + Deer

From GM Jessica Arnold and the bar team at Dove + Deer in Albany's historic Center Square. Lot 12 is a honeyed cocktail with the smokiness of mezcal and the kick of ginger. For 1 Serving(s)


1 oz honey simple syrup
2 oz mezcal
2 oz ginger beer
1/2 tsp lime juice (1/2 lime)
1 tsp Tajin chile salt (optional)

Lot 12 | Dove + Deer Directions


1. Combine honey simple syrup, mezcal and lime juice in a tumbler with ice. 

2. Shake for 15 seconds.

3. Pour into a coupe or over a large ice cube in a rocks glass. (Optional to rim the glass with Tajin salt. See notes.)


Recipe notes

For the honey simple syrup, use equal parts (1:1) honey and water.

1/2 cup of each is usual but adjust according to the sweetness of your honey. Some very sweet honeys will be better at a 2:1 ratio of water to honey 


1. Heat 1/2 cup water to a simmer. Remove from the stove.

2. Stir in 1/2 cup of honey and keep stirring until it has dissolved. (NOTE: It's better to mix in the honey off the heat so you don't reduce (thicken) the syrup by boiling off the water.)  


GARNISH, optional: 

  • Lemon sugar-salt rim: Invert the glass and dip the edges in saucer of lemon or lime juice, and then into a Tajin salt. 
  • Garnish with a candied ginger on a cocktail pick or a twist of lime peel.
