1 oz honey simple syrup |
2 oz mezcal |
2 oz ginger beer |
1/2 tsp lime juice (1/2 lime) |
1 tsp Tajin chile salt (optional) |
Steps:
1. Combine honey simple syrup, mezcal and lime juice in a tumbler with ice.
2. Shake for 15 seconds.
3. Pour into a coupe or over a large ice cube in a rocks glass. (Optional to rim the glass with Tajin salt. See notes.)
For the honey simple syrup, use equal parts (1:1) honey and water.
1/2 cup of each is usual but adjust according to the sweetness of your honey. Some very sweet honeys will be better at a 2:1 ratio of water to honey
Directions:
1. Heat 1/2 cup water to a simmer. Remove from the stove.
2. Stir in 1/2 cup of honey and keep stirring until it has dissolved. (NOTE: It's better to mix in the honey off the heat so you don't reduce (thicken) the syrup by boiling off the water.)
