Melon-Cucumber-Honey Cooler

Melon stars alongside cool cucumber and sweet honey in this simple recipe. Make a batch for a crowd.

1/2 cup of cucumber honey simple syrup (Add 1/3 English cucumber, diced, to the honey simple syrup recipe.
1/2 honeydew melon, diced
3/4 English cucumber, peeled and diced
1/2 cup fresh lemon juice
2 cups soda water

Melon-Cucumber-Honey Cooler Directions

  •       Puree the melon and cucumber in a blender, or finely mince with a knife and mash to a puree in a mortar and pestle or with the flat side of large knife blade.
  •       Strain the melon and cucumber puree through a sieve and collect all the juice.
  •       Make honey-cucumber simple syrup: Simmer water, honey and cucumber. Strain out sliced cucumber. Cool.
  •       In a pitcher, stir together the melon and cucumber juice, honey-cucumber simple syrup and lemon juice. Chill.
  •       Pour over ice, top with soda water, lightly stir without flattening the fizz.
  •       Garnish with slices of cucumber.
